Currently I am feeding my axolotl mealworms, which have their heads chopped off and their insides squezed out, which the axolotl then eats. I do not feed it the skin, as I heard it can make the axolotl become constipated. I feed it about 10 of these every 2-3 days. Is this enough, or should I feed it less but more often, or more over a longer gap of time?

Mealworms are a rather poor food generally. I would advice offering earthworms. If those are not available then you can try bloodworms, tubifex, blackworms, waxworms and even crickets. Crickets should be as readily available as mealworms and are a far better food (remember to gut load).
